Prepare tender, flavorful chicken fajitas easily using your slow cooker. This recipe requires minimal preparation and yields excellent results for a simple weeknight dinner.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 packet (1 oz) low-sodium taco seasoning mix
  • 1/2 cup water or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Place the sliced onion and bell peppers in the bottom of your slow cooker.
  2. Place the chicken breasts on top of the vegetables.
  3. In a small bowl, mix the taco seasoning, cumin, chili powder, garlic powder, and salt.
  4. Sprinkle the seasoning mix evenly over the chicken.
  5. Pour the water or chicken broth and olive oil over everything.
  6. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  7. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker and stir to coat with the juices and vegetables.
  8. Serve hot with your choice of tortillas and toppings.

Notes

  • For a low-carb option, serve the filling over lettuce or cauliflower rice instead of tortillas.
  • This recipe is naturally gluten-free if you use a gluten-free taco seasoning packet or your own spice blend.
  • You can freeze leftovers for up to three months. Thaw overnight in the refrigerator before reheating.
