1 cup full-fat sour cream
1 cup guava puree (strained)

1 cup powdered sugar (for cake)
1 cup unsalted butter, softened (for frosting)
1/2 cup heavy cream
1 teaspoon almond extract
1/4 cup finely ground macadamia nuts (for frosting)
2 tablespoons guava nectar (for frosting)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the sour cream and guava puree.
Alternate adding the dry ingredients and the wet guava mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Fold in the toasted chopped macadamia nuts.
Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
Prepare the frosting: Beat the powdered sugar and softened butter until smooth. Gradually add the heavy cream and almond extract, beating until light and fluffy. Mix in the ground macadamia nuts and guava nectar until the frosting reaches a spreadable consistency. Add more powdered sugar if too thin, or more nectar if too thick.
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of frosting on top. Place the second layer on top and frost the top and sides of the entire cake.
Chill the cake for 30 minutes before slicing for cleaner cuts.
Notes
For the best texture, use room temperature eggs and sour cream.
Toasting the macadamia nuts deepens their flavor significantly.
If you want a stronger guava color, add one drop of red food coloring to the batter.
