  • 2 cups cooked, shredded chicken
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup dried egg noodles or cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, cream of mushroom soup, and milk. Mix until just combined.
  3. Stir in the frozen mixed vegetables, dried egg noodles or cooked rice, and black pepper. Do not overmix.
  4. Pour the entire mixture into the prepared baking dish, spreading it evenly.
  5. Bake for 30 minutes.
  6. Remove the dish from the oven and sprinkle the shredded cheddar cheese evenly over the top.
  7. Return the casserole to the oven and bake for an additional 5 to 10 minutes, or until the cheese is melted and bubbly.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • If you use cooked rice instead of dry noodles, reduce the baking time by 10 minutes.
  • For a richer flavor, substitute one can of soup with cream of celery soup.
