  • 1 (28 ounce) can whole peeled tomatoes (San Marzano preferred)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 clove garlic, minced (optional)
  • 1/4 teaspoon sugar (optional, for acidity balance)

Instructions

  1. Drain the whole peeled tomatoes, reserving the liquid. Place the whole tomatoes into a medium bowl.
  2. Use your hands or an immersion blender to crush the tomatoes until you reach a slightly chunky, sauce-like consistency. Do not over-process; a little texture is good.
  3. Stir in the olive oil, oregano, basil, salt, pepper, minced garlic (if using), and sugar (if using).
  4. Taste the sauce and adjust salt or pepper as needed.
  5. Use the sauce immediately on your pizza dough. If the sauce seems too thin, stir in one tablespoon of the reserved tomato liquid at a time until you reach your desired thickness.

Notes

  • For a New York style sauce, use crushed tomatoes instead of whole peeled tomatoes and skip the crushing step.
  • If you prefer a smoother sauce, use a food processor for a quick pulse or two after adding all ingredients.
  • This sauce is best used fresh; it does not require simmering for flavor development.
