1 (15 ounce) package dried 15 bean soup mix (do not use the seasoning packet)
1 pound smoked ham hock or leftover ham, cut into pieces
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
8 cups water or low-sodium chicken broth
1 teaspoon dried thyme
1 bay leaf
1 teaspoon black pepper
1/2 teaspoon salt (adjust after cooking)
Instructions
Rinse the dried beans thoroughly under cold water. Discard any small stones or damaged beans.
Place the rinsed beans, ham, onion, carrots, celery, water or broth, thyme, bay leaf, and pepper into the basin of a 6-quart or larger slow cooker.
Stir all ingredients together well.
Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beans are tender and the soup has thickened.
Remove and discard the bay leaf. Taste the soup and add salt as needed. If you used a ham hock, remove the meat, shred it, and return the shredded meat to the soup.
If the soup is too thin, remove the lid for the last 30 minutes of cooking time to allow some liquid to evaporate.
Serve hot.
Notes
For a thicker soup, mash about 1 cup of the cooked beans against the side of the slow cooker and stir them back into the mixture.
If you do not have smoked ham, use 1/2 cup of diced bacon cooked until crisp before adding it to the slow cooker with the other ingredients.
