Make a creamy, pub-style beer cheese dip quickly on the stovetop, perfect for pretzels or chips.

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup beer (lager or pale ale recommended)
  • 1/2 cup milk
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground mustard powder
  • Pinch of cayenne pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly whisk in the beer until smooth. Cook until the mixture thickens slightly, about 2 minutes.
  4. Whisk in the milk. Continue heating until the mixture begins to simmer lightly.
  5. Reduce the heat to low. Add the shredded cheddar and Monterey Jack cheese, a handful at a time, stirring until each addition is completely melted and smooth before adding more. Do not let the mixture boil.
  6. Stir in the salt, mustard powder, and cayenne pepper.
  7. Remove from heat and serve immediately with pretzels, chips, or vegetables.

Notes

  • Use a good quality, sharp cheddar for the best flavor.
  • Shred your own cheese; pre-shredded cheese contains anti-caking agents that can make the sauce grainy.
  • If the dip becomes too thick while serving, whisk in a tablespoon of milk or beer to thin it.
