12 large eggs
1 cup milk (any kind)
1 cup cottage cheese, small curd
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
2 cups shredded cheese (Cheddar or Monterey Jack blend)
1 cup cooked, crumbled sausage or diced ham (optional)
1 cup frozen hash browns or tater tots (optional)
Grease a 9×13 inch baking dish. If using hash browns or tots, spread them evenly in the bottom of the dish.
In a large bowl, whisk together the eggs, milk, cottage cheese, salt, pepper, and garlic powder until well combined.
Stir in the shredded cheese and any cooked meat you are adding.
Pour the egg mixture over the hash browns or directly into the prepared dish if omitting the starch base.
Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, or preferably overnight.
When ready to bake, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Remove the plastic wrap.
Bake uncovered for 35 to 45 minutes, or until the center is set and a knife inserted near the middle comes out clean.
Let the egg bake rest for 5 minutes before slicing and serving.
Notes
For a fluffier texture, use whole milk or half-and-half instead of skim milk.
You can substitute the sausage or ham with 1 cup of cooked, crumbled bacon or sautéed vegetables like spinach and mushrooms.
If you are in a hurry and skip the make-ahead step, let the mixture sit at room temperature for 30 minutes before baking, and reduce the cook time slightly.
