Make a rich, creamy, and silky smooth chocolate mousse without baking or using raw eggs. This recipe is simple and quick.

  • 6 ounces bittersweet chocolate, chopped
  • 1/4 cup hot water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups heavy whipping cream, cold
  • 2 tablespoons granulated sugar

Instructions

  1. Place the chopped chocolate in a medium heatproof bowl. Pour the hot water over the chocolate and let it sit for 2 minutes.
  2. Whisk the chocolate and water mixture until completely smooth. Stir in the vanilla extract and salt. Set aside to cool slightly, about 10 minutes.
  3. In a separate large bowl, use an electric mixer to beat the cold heavy whipping cream and granulated sugar until stiff peaks form. This takes about 3 to 5 minutes.
  4. Gently fold about one-third of the whipped cream into the cooled chocolate mixture until just combined.
  5. Add the remaining whipped cream to the chocolate mixture. Fold carefully until no white streaks remain, being careful not to deflate the air.
  6. Spoon or pipe the mousse into individual serving dishes.
  7. Chill in the refrigerator for at least 2 hours before serving to allow it to set.

Notes

  • For a richer flavor, use high-quality dark chocolate (70% cacao or higher).
  • If you prefer a lighter texture, you can fold in one stiffly beaten egg white instead of using all whipped cream, but this requires careful handling.
  • You can substitute the granulated sugar with powdered sugar for a slightly smoother texture in the whipped cream.
