A simple, comforting baked vegetable casserole featuring a rich, cheesy sauce, perfect for a weeknight dinner or a hearty side dish.

  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup cauliflower florets
  • 1 cup frozen peas
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Steam or lightly boil the broccoli, carrots, and cauliflower until tender-crisp, about 5 minutes. Drain well and place the cooked vegetables and frozen peas in the prepared baking dish.
  3. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for one minute, stirring constantly.
  4. Gradually whisk in the milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  5. Remove the sauce from the heat. Stir in the salt, pepper, garlic powder, and 1 1/2 cups of the cheddar cheese until the cheese melts completely into the sauce.
  6. Pour the cheese sauce evenly over the vegetables in the baking dish. Gently toss to coat.
  7. In a small bowl, mix the remaining 1/2 cup of cheddar cheese with the panko breadcrumbs. Sprinkle this mixture evenly over the top of the casserole.
  8. Bake for 25 to 30 minutes, or until the sauce is bubbly and the topping is golden brown. Let stand for 5 minutes before serving.

Notes

  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
  • You can substitute other vegetables like green beans or mushrooms for variety.
  • Use your favorite cheese blend for different flavor profiles.
