Make this simple, creamy potato soup in your slow cooker with minimal prep work for a hearty weeknight dinner.

  • 32 ounces frozen shredded hash browns (do not thaw)
  • 1 pound smoked sausage or bacon, sliced (optional)
  • 1 large onion, chopped
  • 4 cups chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 teaspoon dried minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 8 ounces shredded sharp cheddar cheese
  • 1/2 cup sour cream (for topping)
  • 2 tablespoons chopped fresh chives (for topping)

Instructions

  1. Place the frozen hash browns, sausage or bacon (if using), and chopped onion into the slow cooker.
  2. Pour in the chicken broth, cream of chicken soup, and cream of celery soup over the ingredients.
  3. Stir in the dried minced onion, salt, and pepper.
  4. Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until potatoes are tender.
  5. About 30 minutes before serving, stir in the milk.
  6. Remove the lid and stir in the shredded cheddar cheese until it melts completely and the soup is creamy.
  7. Serve hot, topping each bowl with a dollop of sour cream and fresh chives.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the slow cooker before adding the cheese.
  • If you skip the sausage or bacon, add 1 tablespoon of butter for richness.
  • You can substitute frozen diced potatoes for hash browns if preferred.
