Easy Ground Beef Lasagna Soup

A simple, hearty soup capturing the flavors of classic lasagna in a quick, one-pot meal.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 bay leaf
  • 8 ounces lasagna noodles, broken into 1-inch pieces
  • 1/2 cup heavy cream (optional)
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, oregano, basil, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the crushed tomatoes, tomato sauce, and beef broth. Add the bay leaf. Bring the mixture to a boil.
  5. Once boiling, add the broken lasagna noodles. Reduce the heat to maintain a simmer. Cook uncovered for 10 to 12 minutes, stirring occasionally so the noodles do not stick, until the pasta is tender.
  6. Remove and discard the bay leaf. Stir in the heavy cream, if using, and the 1/2 cup of Parmesan cheese until melted and combined.
  7. Ladle the soup into bowls. Top each serving with an extra dollop of ricotta cheese (if desired), fresh parsley, and extra Parmesan cheese.

Notes

  • For a vegetarian version, substitute the ground beef with 1 pound of browned mushrooms and lentils or use vegetable broth.
  • Break the lasagna noodles into smaller, more manageable pieces before adding them to the soup.
  • You can prepare this soup ahead of time; store leftovers in the refrigerator for up to 3 days. Add a splash of broth when reheating if the soup thickens too much.
