Prepare this simple, bright quinoa dish quickly. It uses fresh lemon juice and herbs for a zesty flavor, perfect as a side or light meal.

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Combine the rinsed quinoa and vegetable broth (or water) in a medium saucepan. Bring the mixture to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until all the liquid is absorbed.
  3. Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
  4. Fluff the cooked quinoa gently with a fork.
  5. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper to make the dressing.
  6. Pour the dressing over the warm quinoa. Add the chopped parsley, dill, and mint.
  7. Toss everything together until the herbs and dressing coat the quinoa evenly. Serve warm or chilled.

Notes

  • For fluffier quinoa, rinse the grains well before cooking to remove saponins.
  • You can substitute any combination of fresh, soft herbs you prefer, such as chives or basil.
  • This recipe works well for meal prepping; store it in an airtight container in the refrigerator for up to four days.
  • Add 1/2 cup of chopped cucumber or toasted pine nuts for extra texture.
