  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • For Dressing: 3 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard, 1 clove garlic minced

Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. In a bowl, toss the chicken with 2 tablespoons olive oil, 1 tablespoon lemon juice, oregano, thyme, salt, and pepper.
  3. Heat a skillet over medium-high heat. Cook the seasoned chicken for 6 to 8 minutes, stirring occasionally, until fully cooked through.
  4. While the chicken cooks, prepare the dressing: whisk together 3 tablespoons olive oil, 1 tablespoon lemon juice, Dijon mustard, and minced garlic in a small bowl.
  5. Assemble the bowls: Divide the cooked quinoa or rice among serving bowls.
  6. Top the base with the cooked chicken, cherry tomatoes, cucumber, olives, and red onion.
  7. Drizzle the dressing evenly over the bowls and sprinkle with feta cheese.

Notes

  • You can marinate the chicken for 30 minutes before cooking for deeper flavor.
  • For meal prep, store the dressing separately and add just before serving.
