A simple recipe for a moist, tender quick bread featuring fresh strawberries and topped with a sweet strawberry glaze. This recipe requires only one bowl for mixing.

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk or water (for glaze)
  • 1/2 teaspoon lemon juice (optional, for glaze)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add the sour cream or yogurt to the wet ingredients and mix until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  7. Gently fold in the chopped fresh strawberries using a spatula.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  11. Prepare the glaze: Whisk together the powdered sugar, milk or water, and lemon juice (if using) until smooth. Adjust liquid for desired consistency.
  12. Drizzle the glaze over the cooled bread before slicing and serving.

Notes

  • For the best texture, gently fold the strawberries in at the end to avoid crushing them.
  • If you do not have sour cream, plain Greek yogurt works well as a substitute for moisture.
  • You can use frozen strawberries, but do not thaw them; toss them lightly in a tablespoon of flour before folding them into the batter to prevent sinking.
