1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (10 ounce) can red enchilada sauce
1 (14.5 ounce) can diced tomatoes, undrained
4 cups beef broth
1 tablespoon taco seasoning
8 ounces uncooked medium pasta shells or rotini
1 cup frozen corn
1 cup shredded Mexican cheese blend
Instructions
Brown the ground beef and chopped onion in a large pot or Dutch oven over medium heat. Drain excess fat.
Add the minced garlic and cook for one minute until fragrant.
Pour in the enchilada sauce, diced tomatoes (with juice), beef broth, and taco seasoning. Stir to combine.
Bring the mixture to a boil.
Add the uncooked pasta and frozen corn to the pot. Stir well.
Reduce the heat to medium-low, cover the pot, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and most of the liquid is absorbed.
Remove the pot from the heat. Stir in the shredded cheese until melted and creamy.
Serve immediately.
Notes
For a spicier dish, add a dash of cayenne pepper with the taco seasoning.
You can substitute ground turkey or shredded cooked chicken for the ground beef.
If the pasta seems too thick before it is fully cooked, add a splash more broth or water.
