2 tablespoons olive oil
3 large yellow onions, thinly sliced
1 teaspoon salt, divided
1/2 teaspoon black pepper, divided
2 cloves garlic, minced
4 cups beef broth
1 pound pasta (like penne or rotini)
1/2 cup heavy cream
1 cup shredded Gruyère cheese
1/2 cup grated Parmesan cheese
1 tablespoon fresh thyme leaves (optional)
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced onions, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook slowly, stirring occasionally, for 20 to 25 minutes until the onions are deeply caramelized and soft.
Add the minced garlic to the pot and cook for 1 minute until fragrant.
Pour in the beef broth and bring the mixture to a simmer. Add the pasta and the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper.
Cook according to the pasta package directions, stirring frequently to prevent sticking, until the pasta is al dente and most of the liquid is absorbed (about 10 to 12 minutes).
Reduce the heat to low. Stir in the heavy cream.
Remove the pot from the heat. Stir in the Gruyère cheese and Parmesan cheese until melted and the sauce is creamy.
Stir in the fresh thyme, if using. Serve immediately.
Notes
For deeper flavor, use low-sodium beef broth.
If the sauce seems too thick, add a splash of hot water or extra broth until you reach your desired consistency.
You can substitute Gruyère with Swiss cheese if needed.
