Make this crunchy and savory Frito Cowboy Cabbage Salad. It combines shredded cabbage with a tangy dressing and crunchy corn chips, perfect for potlucks or as a hearty side dish.

  • 1 bag (14 oz) coleslaw mix or shredded cabbage
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) whole kernel corn, drained
  • 1 cup shredded cheddar cheese
  • 1 cup Fritos corn chips, lightly crushed
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons sugar
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the coleslaw mix, black beans, corn, and cheddar cheese. Set aside.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, onion powder, salt, and pepper until smooth. This is your dressing.
  3. Pour the dressing over the cabbage mixture. Toss gently until all ingredients are evenly coated.
  4. Cover the salad and chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to blend.
  5. Just before serving, gently fold in the crushed Fritos corn chips. Do not add them too early, or they will become soggy.
  6. Serve immediately as a side dish.

Notes

  • For best texture, crush the Fritos just before you add them to the salad.
  • You can substitute the mayonnaise with Greek yogurt for a slightly lighter dressing.
  • This salad holds up well in the refrigerator for up to 2 days without the Fritos added.
