A simple recipe for fluffy quinoa cooked with garlic and butter, mixed with green peas for a flavorful side dish.

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup frozen green peas
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Rinse the quinoa thoroughly under cold running water using a fine-mesh sieve until the water runs clear.
  2. Combine the rinsed quinoa and vegetable broth (or water) in a medium saucepan. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until all the liquid is absorbed.
  4. Remove the saucepan from the heat and let it stand, covered, for 5 minutes. Fluff the quinoa gently with a fork.
  5. While the quinoa rests, melt the butter in a separate small skillet over medium heat.
  6. Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant. Do not let the garlic brown.
  7. Add the frozen green peas to the skillet with the garlic butter. Cook for 3 to 4 minutes, stirring occasionally, until the peas are heated through.
  8. Add the cooked, fluffed quinoa to the skillet with the peas and garlic butter. Stir gently to combine everything evenly.
  9. Season with salt and pepper. Stir in the chopped parsley, if using.
  10. Serve immediately as a side dish.

Notes

  • For a richer flavor, substitute half the butter with olive oil.
  • If you prefer a tangier taste, add a squeeze of fresh lemon juice after mixing all ingredients.
  • You can substitute frozen peas with canned peas, but drain them well before adding them in step 6.
