Make a rich, creamy, and deeply flavored Garlic Tikka Masala Sauce from scratch for your favorite protein or vegetables.

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 6 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 (14.5 ounce) can crushed tomatoes
  • 1/2 cup water or chicken broth
  • 1/2 cup heavy cream or full-fat coconut milk
  • 1 teaspoon sugar
  • 1 teaspoon salt (or to taste)
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large saucepan over medium heat.
  2. Add the chopped onion and cook until softened and translucent, about 5 to 7 minutes.
  3. Add the minced garlic and grated ginger. Cook for 1 minute until fragrant, stirring constantly to prevent burning.
  4. Stir in the cumin powder, coriander powder, turmeric powder, garam masala, and red chili powder. Cook the spices for 30 seconds, stirring them into the onion mixture.
  5. Pour in the crushed tomatoes and water or broth. Bring the mixture to a simmer.
  6. Reduce the heat to low, cover the pan partially, and let the sauce simmer for 15 minutes, stirring occasionally. This allows the flavors to meld.
  7. Remove the sauce from the heat. Use an immersion blender or carefully transfer the sauce to a regular blender to blend until completely smooth. Return the smooth sauce to the saucepan.
  8. Stir in the heavy cream (or coconut milk), sugar, and salt. Heat gently over low heat until warmed through; do not boil after adding the cream.
  9. Taste the sauce and adjust salt or chili powder as needed.
  10. Serve hot over cooked chicken, paneer, or vegetables, garnished with fresh cilantro.

Notes

  • For a deeper garlic flavor, you can roast half of the minced garlic before adding it to the onions.
  • If you prefer a thicker sauce, simmer uncovered for a few extra minutes before adding the cream.
  • This sauce freezes well for up to three months.
