1 pound fresh green beans, trimmed
1/2 cup olive oil
1/4 cup fresh lemon juice
1 teaspoon dried oregano
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
Instructions
Blanch the green beans in boiling salted water for 3 to 5 minutes until crisp-tender. Immediately transfer them to an ice water bath to stop the cooking process. Drain well.
In a small bowl, whisk together the olive oil, lemon juice, oregano, minced garlic, salt, and pepper to make the dressing.
Place the cooled green beans in a medium bowl.
Pour the dressing over the beans and toss gently to coat.
Stir in the fresh parsley.
Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
You can substitute frozen green beans for fresh; cook according to package directions before chilling.
For a richer flavor, allow the salad to marinate in the refrigerator for up to 4 hours.
