Make crispy, flavorful roast potatoes seasoned with lemon, oregano, and baked with salty feta cheese.

  • 2 lbs Russet or Yukon Gold potatoes, cut into 1-inch pieces
  • 1/2 cup olive oil
  • 1 large lemon, juiced and zested
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 ounces feta cheese, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cut potatoes in a large bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  4. Pour the oil mixture over the potatoes and toss until every piece is evenly coated.
  5. Spread the potatoes in a single layer on a large baking sheet. Do not overcrowd the pan.
  6. Roast for 30 minutes.
  7. Remove the pan from the oven and gently turn the potatoes.
  8. Sprinkle the crumbled feta cheese evenly over the potatoes.
  9. Return the pan to the oven and roast for another 15 to 20 minutes, or until the potatoes are golden brown and crispy and the feta is slightly softened and browned in spots.
  10. Serve immediately.

Notes

  • For extra crispiness, soak the cut potatoes in cold water for 30 minutes before drying them completely.
  • If you prefer a softer feta texture, add it during the last 10 minutes of cooking instead of the last 15-20 minutes.
  • This dish pairs well with grilled chicken or lamb.
