Make a very moist and tender banana bread loaf using Greek yogurt for added protein and texture. This recipe is simple to follow and results in a delicious, healthier quick bread.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup plain nonfat Greek yogurt
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until just combined.
  5. Stir in the mashed bananas and Greek yogurt until mostly mixed.
  6. Alternate adding the dry ingredients mixture and the milk to the wet ingredients, beginning and ending with the dry ingredients. Mix only until just combined; do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • Use very ripe, spotty bananas for the best flavor and moisture.
  • For an extra tender crumb, avoid mixing the batter once the flour is added.
  • You can substitute brown sugar for white sugar for a deeper molasses flavor.
  • This bread makes a great breakfast item or a satisfying snack.
