4 boneless, skinless chicken breasts (about 6 oz each)
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
If chicken breasts are thick, pound them to an even 3/4-inch thickness.
In a bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, garlic powder, salt, and pepper to create the marinade.
Place the chicken breasts in a resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting later.
Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours due to the acid content.
Preheat your grill to medium heat (about 350°F to 375°F). Clean and lightly oil the grates.
Remove the chicken from the marinade, letting excess drip off. Discard the used marinade.
Place the chicken on the preheated grill. Grill for 5 to 7 minutes per side.
During the last 2 minutes of cooking, brush the reserved, unused marinade onto the chicken breasts frequently to build a glaze. Watch closely to prevent burning due to the honey content.
Cook until the internal temperature reaches 165°F.
Remove the chicken from the grill and let it rest for 5 minutes before serving.
Notes
To prevent the honey from burning, keep your grill temperature at medium heat and avoid placing the chicken directly over high flames.
If you prefer a lower sugar option, reduce the honey by one tablespoon and substitute it with an equal amount of sugar-free honey substitute or use slightly more Dijon mustard for tang.
For best results, use a meat thermometer to check for doneness at the thickest part of the breast.
