- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked brown rice
- 1 cup frozen corn
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup chopped fresh cilantro for garnish
- Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until soft, about 5 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Add ground turkey to the skillet. Break it apart with a spoon and cook until browned completely. Drain any excess fat.
- Stir in cumin, chili powder, oregano, salt, and pepper. Cook for 1 minute, stirring constantly.
- Add cooked brown rice and frozen corn to the skillet. Stir well to combine and heat through, about 3 minutes.
- Stir in salsa until everything is coated and heated.
- Divide the mixture into bowls. Top each serving with shredded cheese, if using, and fresh cilantro.
