1 pound large shrimp, peeled and deveined
1/2 cup unsalted butter
6 cloves garlic, minced
1/4 cup olive oil
1/4 cup fresh lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
2 tablespoons fresh parsley, chopped
Cooked white rice, for serving
Instructions
Pat the shrimp dry with paper towels. Set aside.
In a large skillet over medium heat, melt the butter with the olive oil.
Add the minced garlic to the skillet. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
Add the shrimp to the skillet in a single layer. Cook for 2 to 3 minutes per side until pink and opaque. Do not overcook.
Remove the skillet from the heat. Stir in the lemon juice, salt, black pepper, and cayenne pepper, if using. Toss the shrimp to coat them completely in the sauce.
Stir in the chopped parsley.
Serve the garlic shrimp immediately over hot cooked white rice, spooning extra sauce over the top.
Notes
For the best flavor, use fresh garlic. Pre-minced garlic will not provide the same intensity.
If you prefer a slightly sweeter sauce, add 1 teaspoon of brown sugar to the butter mixture.
This dish is best eaten right away while the shrimp are hot and the sauce is fresh.
