Ingredients
Scale
1 cup all-purpose flour
1 scoop vanilla whey protein powder
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1 cup plain Greek yogurt (2% or full fat)
1/2 cup milk (dairy or non-dairy)
2 tablespoons melted coconut oil or butter
1 teaspoon vanilla extract
Instructions
Preheat your waffle iron according to the manufacturer’s directions. Lightly grease the plates if necessary.
In a large bowl, whisk together the flour, protein powder, baking powder, and salt.
In a separate medium bowl, whisk the egg, Greek yogurt, milk, melted oil or butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
Pour the batter onto the hot waffle iron, using the amount recommended for your specific iron size.
Cook until golden brown and crisp, usually 4 to 6 minutes, depending on your iron setting.
Remove the waffle carefully and serve immediately with your preferred toppings.
Notes
For crispier waffles, let the batter rest for 5 minutes before cooking.
You can substitute half the flour with oat flour for added fiber.
This batter works well for meal prepping; cool completely before freezing in an airtight container.
