1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
1 cup cooked white rice (or brown rice) per serving
2 cups broccoli florets
1 tablespoon olive oil
Salt and black pepper to taste
For the Honey BBQ Sauce:
1/2 cup ketchup
1/4 cup honey
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
For Garnish:
1 tablespoon sesame seeds
2 green onions, sliced
Instructions
Preheat your oven to 400°F (200°C). Toss the broccoli florets with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15 minutes.
While the broccoli roasts, prepare the sauce. In a small saucepan, combine the ketchup, honey, apple cider vinegar, Worcestershire sauce, soy sauce, smoked paprika, garlic powder, and cayenne pepper.
Bring the sauce mixture to a simmer over medium heat, stirring occasionally. Reduce the heat to low and let it cook for 5 to 7 minutes until the sauce thickens slightly. Remove from heat.
Season the chicken pieces lightly with salt and pepper. Pan-sear the chicken in a large skillet over medium-high heat for 4 to 5 minutes until lightly browned on all sides.
Pour half of the prepared Honey BBQ sauce over the chicken in the skillet. Cook for another 5 to 8 minutes, stirring often, until the chicken is cooked through and the sauce reduces to a thick glaze coating the chicken. Reserve the remaining sauce for serving.
Assemble the bowls: Place a serving of cooked rice in the bottom of each bowl. Top with the glazed chicken pieces and the roasted broccoli.
Drizzle the reserved extra BBQ sauce over the chicken and rice. Garnish with sliced green onions and sesame seeds before serving.
Notes
For meal prep, cook the chicken and sauce separately and store the extra sauce in an airtight container in the refrigerator for up to one week.
You can substitute grilling the chicken for pan-searing if you prefer a smoky flavor.
