1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup quinoa, rinsed
2 cups water or chicken broth
1/4 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
4 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes (optional)
1 tablespoon olive oil
1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
2 green onions, sliced, for garnish
Instructions
Cook the quinoa: Combine the rinsed quinoa and water or broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
Prepare the sauce: In a small bowl, whisk together the honey, soy sauce, rice vinegar, ginger, minced garlic, sesame oil, and red pepper flakes (if using). Set aside half of the sauce for later use.
Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides and cooked through, about 5 to 7 minutes.
Glaze the chicken: Pour the reserved half of the honey garlic sauce over the cooked chicken in the skillet. Bring to a simmer.
Thicken the sauce: Stir the cornstarch slurry well and pour it slowly into the simmering sauce in the skillet, stirring constantly until the sauce thickens into a glaze. Cook for 1 minute.
Combine and serve: Divide the cooked quinoa among serving bowls. Top with the glazed chicken and extra sauce from the skillet. Garnish with sliced green onions.
Notes
For a one-pan meal, you can cook the quinoa separately while you prepare the chicken, or use a rice cooker for the quinoa.
You can substitute chicken thighs for breasts if you prefer a richer flavor.
If you want a less sticky glaze, reduce the amount of honey slightly.
