Ultimate Fudgy Hot Chocolate Brownies with Toasted Marshmallow Topping

Make rich, fudgy brownies that taste like your favorite cup of hot chocolate, finished with a toasted marshmallow topping.

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup hot chocolate mix (standard powder)
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, hot chocolate mix, flour, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25 to 30 minutes. The edges should look set, but the center should still be slightly soft for fudginess.
  9. Remove the pan from the oven. Immediately sprinkle the mini marshmallows evenly over the top of the hot brownies.
  10. Return the pan to the oven for 2 to 4 minutes, or until the marshmallows are puffed and lightly golden brown. Watch closely to prevent burning.
  11. Let the brownies cool completely in the pan before lifting them out using the parchment overhang and cutting into squares.

Notes

  • For an extra rich flavor, use dark cocoa powder in place of some of the regular cocoa powder.
  • To toast the marshmallows more evenly after baking, you can use a kitchen torch instead of the oven broiler.
  • If you prefer a thicker, denser brownie, use an 8×8 inch pan instead, and increase the baking time by about 10 minutes.
