A simple, flavorful chicken recipe balancing sweet, spicy, and savory notes, ready for a weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 ounces feta cheese, crumbled
  • 1/4 cup hot honey
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the chicken breasts dry. Rub them with olive oil, salt, pepper, and garlic powder.
  3. Place the seasoned chicken in the prepared baking dish.
  4. Bake for 18-20 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Remove the chicken from the oven. Immediately top each breast evenly with the crumbled feta cheese.
  6. Drizzle the hot honey over the feta and chicken.
  7. Return the dish to the oven and bake for another 3-5 minutes, just until the feta softens slightly.
  8. Garnish with fresh parsley before serving.

Notes

  • You can make your own hot honey by warming 1/4 cup of regular honey with 1 teaspoon of red pepper flakes for 5 minutes.
  • For extra moisture, you can pound the chicken breasts to an even thickness before seasoning.
  • Serve this chicken over rice or with a side of roasted vegetables.
