1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 cup basmati rice, rinsed
1 cup chicken broth
1/2 cup water
1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper (optional)
1/4 teaspoon ground cinnamon
Instructions
In a bowl, combine the chicken pieces with olive oil, lemon juice, salt, cumin, coriander, paprika, turmeric, ginger, cayenne pepper, and cinnamon. Mix well to coat the chicken. Let it marinate for at least 15 minutes, or up to 4 hours in the refrigerator.
Stir in the rinsed basmati rice, chicken broth, and water. Scrape the bottom of the pot to release any browned bits.
Place the browned chicken pieces on top of the rice mixture. Do not stir.
Secure the lid and set the vent to Sealing. Cook on High Pressure for 5 minutes.
When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully turn the valve to Venting to release any remaining pressure.
Open the lid, fluff the rice gently with a fork, and mix the chicken throughout the rice. Serve immediately.
Notes
For a more authentic texture, you can briefly broil the cooked chicken under a broiler for 2 minutes after mixing it with the rice.
Serve this dish with sliced tomatoes, cucumbers, and a drizzle of tahini sauce.
If you do not have chicken broth, use water and add 1/2 teaspoon of chicken bouillon powder to the liquid.
