- 1 lb large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- Set the Instant Pot to the Sauté function. Add olive oil and butter. When the butter melts, add the minced garlic and cook for 1 minute until fragrant.
- Pour in the white wine or broth and scrape up any browned bits from the bottom of the pot. Let it simmer for 1 minute.
- Add the shrimp, salt, and pepper to the pot. Do not stir excessively.
- Secure the lid and set the vent to sealing. Cook on High Pressure for 1 minute.
- Once cooking is complete, perform a Quick Release of the pressure.
- Open the lid carefully. Stir in the heavy cream and Parmesan cheese until the sauce thickens slightly and becomes creamy.
- Stir in the lemon juice and fresh parsley. Serve immediately over pasta or with crusty bread.
Notes
- For a thicker sauce, you can mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the sauce after the pressure release, then use the Sauté function for 1-2 minutes until thickened.
- Use fresh garlic for the best flavor in this recipe.
- If you do not have white wine, use chicken broth or vegetable broth instead.
