3 lbs yellow onions, thinly sliced
4 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon all-purpose flour
1/2 cup dry sherry or dry white wine
6 cups high-quality beef broth
1 teaspoon Worcestershire sauce
1 bay leaf
1 baguette, sliced 1 inch thick
8 ounces Gruyère cheese, shredded
Instructions
Set the Instant Pot to the Sauté function (Normal setting). Add the butter and let it melt.
Add the sliced onions, salt, and pepper to the pot. Cook, stirring occasionally, for 15 to 20 minutes until the onions are soft and beginning to brown.
Stir in the flour and cook for 1 minute. Pour in the sherry or wine, scraping up any browned bits from the bottom of the pot. Cook until the liquid reduces slightly, about 2 minutes.
Pour in the beef broth and Worcestershire sauce. Add the bay leaf.
Secure the lid and set the vent to Sealing. Select Manual/Pressure Cook (High Pressure) for 20 minutes.
When the cooking time finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to Venting to release any remaining pressure. Remove and discard the bay leaf.
Preheat your oven broiler. Place the baguette slices on a baking sheet.
Ladle the soup into oven-safe bowls. Top each bowl with one or two bread slices.
Cover the bread completely with shredded Gruyère cheese.
Place the bowls on a baking sheet and broil for 2 to 4 minutes, watching closely, until the cheese is melted, bubbly, and golden brown. Serve immediately.
Notes
For deeper onion flavor, you can caramelize the onions on the Sauté function for 30 to 40 minutes before pressure cooking, though the Instant Pot speeds up the process significantly.
Use the best quality beef broth you can find; it makes a large difference in the final flavor.
If you do not have oven-safe bowls, you can toast the bread separately until crisp before topping with cheese and placing under the broiler on a sheet pan.
