Make tender, flavorful honey sriracha chicken quickly using your Instant Pot. This recipe creates a thick, sticky glaze perfect for weeknight meals.

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1/2 cup chicken broth
  • 1/4 cup honey
  • 3 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Optional: Green onions and sesame seeds for garnish

Instructions

  1. Place the cut chicken pieces into the inner pot of your Instant Pot.
  2. In a small bowl, whisk together the chicken broth, honey, sriracha, soy sauce, rice vinegar, garlic powder, and ginger.
  3. Pour the sauce mixture over the chicken in the Instant Pot.
  4. Secure the lid and set the vent to sealing.
  5. Cook on High Pressure (Manual/Pressure Cook) for 6 minutes.
  6. When the cooking time finishes, allow for a Natural Pressure Release (NPR) for 5 minutes, then carefully quick release any remaining pressure.
  7. Remove the lid and switch the Instant Pot to the Sauté function.
  8. In a small cup, whisk the cornstarch and cold water together to create a slurry.
  9. Pour the slurry into the simmering sauce in the pot, stirring constantly until the sauce thickens to your desired consistency, about 1 to 2 minutes.
  10. Stir the chicken to coat it completely with the sticky sauce.
  11. Serve immediately, garnished with green onions and sesame seeds if desired.

Notes

  • Adjust the sriracha amount to control the heat level for your preference.
  • For a thicker sauce, use 1.5 tablespoons of cornstarch instead of 1 tablespoon.
  • You can serve this chicken over steamed rice, noodles, or in lettuce wraps.
