Creamy Instant Pot White Chicken Chili

Make a rich and flavorful white chicken chili quickly using your Instant Pot. This recipe yields tender shredded chicken and a creamy broth.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups low sodium chicken broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 4 ounces cream cheese, cubed
  • 1/2 cup heavy cream (optional, for extra creaminess)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil. When hot, add onion and cook until softened, about 3 minutes.
  2. Add garlic, cumin, and oregano. Cook for 1 minute until fragrant. Press ‘Cancel’.
  3. Place the chicken breasts into the Instant Pot. Add the green chiles, salt, and pepper. Pour in the chicken broth.
  4. Secure the lid and set the valve to sealing. Cook on High Pressure (Manual/Pressure Cook) for 10 minutes.
  5. When cooking is complete, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  6. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot.
  7. Stir in the cannellini beans and great northern beans. Set the Instant Pot to ‘Sauté’ mode (low setting if available).
  8. Stir in the cubed cream cheese until fully melted and the chili thickens slightly.
  9. If using, stir in the heavy cream. Cook for 2-3 minutes until heated through. Serve hot.

Notes

  • For a thicker chili, mash about 1/2 cup of the beans against the side of the pot before adding the cream cheese.
  • If you prefer a spicier chili, add 1/4 teaspoon of cayenne pepper with the other spices.
  • Garnish with shredded Monterey Jack cheese, fresh cilantro, or avocado slices.
