A comforting, homemade recipe for baked chicken enchiladas inspired by Joanna Gaines’ rustic cooking style.

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • 2 cups cooked, shredded chicken
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 cup shredded Monterey Jack cheese, divided
  • 8 corn tortillas
  • 1 (10 ounce) can red enchilada sauce
  • 1/2 cup shredded cheddar cheese for topping

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add garlic, cumin, chili powder, and oregano. Cook for 1 minute until fragrant.
  4. In a bowl, combine the cooked chicken, cream of chicken soup, sour cream, chicken broth, and 1/2 cup of the Monterey Jack cheese. Mix well with the onion and spice mixture.
  5. Warm the corn tortillas briefly in the microwave or a dry skillet to make them pliable.
  6. Dip each tortilla into the red enchilada sauce, coating both sides.
  7. Spoon about 1/4 cup of the chicken filling down the center of each tortilla. Roll the tortilla up tightly and place seam-side down in the prepared baking dish. Repeat with remaining tortillas and filling.
  8. Pour the remaining red enchilada sauce evenly over the rolled enchiladas.
  9. Sprinkle the remaining 1/2 cup Monterey Jack cheese and the cheddar cheese over the top.
  10. Bake for 20 to 25 minutes, or until the sauce is bubbly and the cheese is melted and lightly browned.

Notes

  • For a fresher sauce flavor, you can substitute canned sauce with a homemade red enchilada sauce.
  • Use rotisserie chicken for quick preparation.
  • If tortillas tear, simply place the pieces in the dish and cover them with sauce and filling.
