1 tablespoon avocado oil or coconut oil
1 large green bell pepper, sliced
1 large red bell pepper, sliced
1 medium yellow onion, sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/2 cup beef broth
1/4 cup tamari or coconut aminos (for lower sodium/carb)
1 tablespoon apple cider vinegar
1 teaspoon sesame oil
1/2 teaspoon xanthan gum (for thickening)
1/4 teaspoon black pepper
Salt to taste
Optional for serving: 2 cups cauliflower rice
Instructions
Prepare the beef by slicing it thinly. Pat the slices dry with paper towels.
In a small bowl, whisk together the beef broth, tamari/coconut aminos, apple cider vinegar, sesame oil, and black pepper. Set the sauce aside.
Heat the avocado oil in a large skillet or wok over medium-high heat. Add the beef in batches, ensuring not to overcrowd the pan. Sear quickly until browned, about 1-2 minutes per side. Remove the beef and set it aside.
Add a little more oil to the skillet if needed. Add the sliced bell peppers and onions. Stir-fry for 4 to 5 minutes until they begin to soften but still have some crunch.
Add the minced garlic and grated ginger to the vegetables. Cook for 1 minute until fragrant.
Return the beef to the skillet. Pour the prepared sauce mixture over the beef and vegetables.
Bring the sauce to a simmer. Sprinkle the xanthan gum evenly over the sauce while stirring constantly to prevent clumping. Continue stirring until the sauce thickens, about 1 minute.
Taste the sauce and add salt if necessary. Cook for one final minute to coat everything evenly.
Serve immediately over cauliflower rice, if desired.

For a richer flavor, marinate the sliced beef in 1 tablespoon of coconut aminos for 15 minutes before cooking.
If you prefer a milder onion flavor, blanch the sliced onions briefly before adding them to the stir-fry.
