2 cups broccoli florets
2 cups cauliflower florets
4 ounces cream cheese, softened
1/2 cup heavy whipping cream
1 cup shredded sharp cheddar cheese, divided
1/2 cup shredded Gruyère cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons butter
1/4 cup pork rinds, crushed (optional topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish with butter or cooking spray.
Steam the broccoli and cauliflower florets until they are tender-crisp, about 5 to 7 minutes. Drain them well and spread them evenly in the prepared baking dish.
In a medium saucepan over medium heat, melt the butter. Add the cream cheese and heavy whipping cream. Stir constantly until the cream cheese is fully melted and the mixture is smooth.
Reduce the heat to low. Stir in the Parmesan cheese, 3/4 cup of the cheddar cheese, garlic powder, onion powder, salt, and pepper. Continue stirring until all the cheese is melted and the sauce is smooth and thick. Do not let the sauce boil.
Pour the cheese sauce evenly over the steamed vegetables in the baking dish. Gently toss to coat the vegetables completely.
Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the casserole. If using, sprinkle the crushed pork rinds over the cheese layer.
Bake for 20 to 25 minutes, or until the sauce is bubbly and the top is lightly browned.
Let the gratin rest for 5 minutes before serving.
Notes
For a smoother sauce, you can use an immersion blender briefly before adding the final cheese portion.
You can substitute Gruyère with Monterey Jack or Provolone for a milder flavor profile.
To make this ahead, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
