Make a rich, low-carb chocolate mousse using cream cheese for a decadent, keto-friendly dessert.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup powdered keto-friendly sweetener (erythritol or monk fruit blend)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Place the softened cream cheese in a large bowl. Beat with an electric mixer until smooth and creamy.
  2. Add the powdered keto sweetener, cocoa powder, vanilla extract, and salt to the cream cheese mixture. Beat until fully combined and smooth. Scrape down the sides of the bowl as needed.
  3. In a separate, chilled bowl, whip the cold heavy whipping cream until stiff peaks form.
  4. Gently fold about one-third of the whipped cream into the chocolate cream cheese mixture to lighten it.
  5. Fold in the remaining whipped cream until just combined. Do not overmix; you want to keep the air in the mousse.
  6. Spoon the mousse into individual serving dishes.
  7. Chill in the refrigerator for at least 1 hour before serving to allow it to set slightly.

Notes

  • For a firmer texture, chill the mousse for 2 hours.
  • You can substitute the cocoa powder with melted, unsweetened chocolate if you prefer a deeper flavor, but ensure it cools slightly before mixing.
  • Garnish with a few fresh raspberries or a sprinkle of cocoa powder before serving.
