Make quick, flavorful steak bites coated in a rich, low-carb creamy peppercorn sauce, perfect for a keto dinner or appetizer.

  • 1.5 lb sirloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1 tablespoon cracked black peppercorns
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 2 ounces cream cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pat the steak cubes dry and season lightly with salt and pepper.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat until shimmering.
  3. Sear the steak cubes in batches, ensuring not to overcrowd the pan, until browned on all sides. Remove the steak and set aside.
  4. Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Add the minced shallot and cook for 1 minute until softened.
  5. Add the minced garlic and cracked peppercorns. Cook for 30 seconds until fragrant.
  6. Pour in the beef broth and scrape up any browned bits from the bottom of the pan. Let the broth reduce by half, about 2 minutes.
  7. Stir in the heavy cream and bring the mixture to a gentle simmer.
  8. Add the cream cheese cubes, stirring constantly until the cheese melts and the sauce thickens slightly.
  9. Stir in the Parmesan cheese until smooth. Taste and adjust salt if needed.
  10. Return the seared steak bites to the skillet. Toss gently to coat them completely in the creamy peppercorn sauce.
  11. Cook for 1-2 minutes until the steak is heated through. Serve immediately.

Notes

  • Use freshly cracked peppercorns for the best flavor in the sauce.
  • If you prefer a smoother sauce, you can strain the sauce after adding the broth and before adding the cream.
  • For extra richness, add 1 teaspoon of Dijon mustard when you add the heavy cream.
