Make a quick, satisfying, low-carb dinner using ground beef, broccoli, and cheese cooked together in one skillet for easy cleanup.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 1/2 cup beef broth
  • 1 tsp Worcestershire sauce (check for low sugar/carb version)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the ground beef and cook, breaking it apart, until browned. Drain excess fat if necessary.
  3. Add the chopped onion and cook until softened, about 3 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the broccoli florets, beef broth, Worcestershire sauce, salt, and pepper to the skillet.
  6. Bring the mixture to a simmer, then cover the skillet and cook for 5 to 7 minutes, or until the broccoli is tender-crisp.
  7. Remove the lid and let any remaining liquid evaporate slightly.
  8. Sprinkle the shredded cheddar cheese over the top of the mixture.
  9. Cover the skillet again briefly until the cheese is melted, about 1 minute. Serve directly from the skillet.

Notes

  • Use full-fat cheese to maintain the high-fat requirement of the keto diet.
  • If you prefer a richer flavor, substitute heavy cream for half of the beef broth.
  • For extra flavor, add 1/2 teaspoon of dried mustard powder with the salt and pepper.
