1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup olive oil
1/4 cup fresh lemon juice
Zest of 1 large lemon
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
Place the cubed chicken into a medium bowl or zip-top bag.
In a separate small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper to create the marinade.
Pour the marinade over the chicken, ensuring all pieces are coated.
Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours. Do not marinate longer than 4 hours.
If using wooden skewers, soak them in water for 20 minutes before use to prevent burning.
Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece. Discard any remaining marinade.
Preheat your grill to medium-high heat, or set your oven broiler to high.
Grill or broil the skewers for 10 to 15 minutes, turning every 3 to 4 minutes, until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.
Remove from heat and serve immediately.
Notes
For grilling, clean and lightly oil your grates before placing the skewers down.
You can substitute chicken thighs for breasts if you prefer a higher fat content.
