Make a simple, chewy, and crispy keto pizza crust using the popular Fathead dough method with only four main ingredients.

  • 1 3/4 cups shredded low-moisture mozzarella cheese
  • 2 ounces cream cheese, cubed
  • 1 large egg
  • 3/4 cup almond flour

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper.
  2. Combine the shredded mozzarella cheese and cubed cream cheese in a microwave-safe bowl.
  3. Microwave in 30-second intervals, stirring between each, until the cheese is fully melted and smooth. This usually takes about 90 seconds total.
  4. Stir the almond flour into the melted cheese mixture until combined.
  5. Add the egg and mix thoroughly until a uniform dough forms. You may need to work the dough with your hands once it cools slightly.
  6. Place the dough ball between two sheets of parchment paper. Roll the dough out evenly to about a 1/4-inch thickness, forming a circle or rectangle.
  7. Remove the top sheet of parchment paper. Prick the dough all over with a fork to prevent large bubbles.
  8. Bake the crust for 8 to 10 minutes until it is lightly golden brown.
  9. Remove the crust from the oven, add your desired low-carb toppings, and return to the oven for another 5 to 8 minutes, or until the toppings are hot and the cheese is melted.

Notes

  • For an extra crispy crust, flip the partially baked crust over halfway through the initial bake time.
  • If you prefer a nut-free option, substitute the almond flour with 1/2 cup of finely ground pork rinds or 1/2 cup of coconut flour, adjusting liquid if necessary.
  • For a high-protein alternative, replace the almond flour with 1/2 cup of finely ground cooked chicken mixed with 1/4 cup of whey protein isolate.
