1 lb ground beef
1 tablespoon taco seasoning (ensure it is low-sugar/keto compliant)
1/4 cup water
2 large ripe avocados
1/2 cup shredded cheddar cheese
1/4 cup sour cream
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
Instructions
Brown the ground beef in a skillet over medium heat. Drain any excess fat.
Stir in the taco seasoning and water. Simmer for 5 minutes until the liquid reduces slightly.
Cut the avocados in half lengthwise and remove the pits. Scoop out a small amount of the avocado flesh from the center of each half to create a larger well for the filling. Dice the removed flesh and set aside.
Mix the reserved diced avocado flesh into the taco meat mixture.
Spoon the taco meat mixture evenly into the four avocado halves.
Top each stuffed avocado half with shredded cheddar cheese.
Place the stuffed avocados on a baking sheet. Broil for 2-3 minutes until the cheese is melted and bubbly. Watch carefully to prevent burning.
Remove from the oven. Top each serving with a dollop of sour cream, a sprinkle of cilantro, and a squeeze of lime juice.
Notes
For extra fat content, use 80/20 ground beef.
You can skip the broiling step and serve the filling warm or cold for a faster assembly.
If you prefer a creamier texture, mix a tablespoon of cream cheese into the meat filling.
