Make giant, thick chocolate chip cookies with a gooey center, similar to the famous Levain Bakery style. This recipe includes walnuts for authentic flavor and texture.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips or chunks
  • 1 cup milk chocolate chips or chunks
  • 1 cup toasted walnuts, roughly chopped

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the semi-sweet chocolate, milk chocolate, and toasted walnuts.
  7. Scoop large portions of dough (about 6 ounces or 1/2 cup) onto the prepared baking sheets. Shape them into thick rounds, about 3 inches wide. Do not flatten them.
  8. Bake for 13 to 15 minutes. The edges should look set and lightly golden, but the centers should still look slightly underbaked and soft.
  9. Remove from the oven and let the cookies cool on the baking sheet for at least 10 minutes before moving them to a wire rack to cool completely.

Notes

  • Toasting the walnuts beforehand deepens their flavor. Spread them on a baking sheet and bake at 350 degrees Fahrenheit for 5 to 7 minutes, then cool before using.
  • For the best gooey texture, slightly underbake the cookies. They will continue to cook on the hot pan after removal.
  • Use high-quality chocolate chunks instead of chips for a better melt and texture.
