Prepare a quick, flavorful, low-carbohydrate chicken bowl featuring bright lemon and fresh dill flavors over a bed of cauliflower rice.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh dill, chopped
  • 1 clove garlic, minced
  • 1 cup crumbled feta cheese
  • 1 large cucumber, diced
  • 2 cups cauliflower rice (fresh or frozen)
  • 1 tablespoon butter or ghee (for cauliflower rice)
  • Optional: 1/4 cup chopped fresh parsley

Instructions

  1. Season the chicken pieces with oregano, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 7 minutes, turning occasionally, until browned and cooked through.
  3. Reduce the heat to low. Add the lemon juice and minced garlic to the skillet. Cook for 1 minute, stirring to coat the chicken.
  4. Stir in the chopped fresh dill. Remove the skillet from the heat.
  5. Prepare the cauliflower rice: In a separate pan, melt the butter or ghee over medium heat. Add the cauliflower rice and cook for 4 to 6 minutes until tender. Season lightly with salt.
  6. Assemble the bowls: Divide the warm cauliflower rice among serving bowls. Top with the lemon dill chicken.
  7. Distribute the diced cucumber and crumbled feta cheese over the chicken in each bowl.
  8. Garnish with fresh parsley, if using, and serve immediately.

Notes

  • For meal prep, store the chicken, vegetables, and cauliflower rice separately. Combine just before serving to maintain texture.
  • If you prefer a creamier sauce, stir 2 tablespoons of full-fat cream cheese into the skillet with the lemon juice at the end.
  • You can substitute zucchini noodles for cauliflower rice for a different low-carb base.
