Make this easy, layered taco casserole without tortillas. It uses ground beef, cream cheese, and spices for a satisfying keto-friendly meal.

  • 1.5 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 packet low-carb taco seasoning (or 2 tablespoons homemade mix)
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (for topping)
  • 1 avocado, mashed (for optional crema)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the ground beef to the skillet. Cook, breaking it apart, until fully browned. Drain off any excess grease.
  4. Stir the taco seasoning and chicken broth into the beef mixture. Simmer for 5 minutes until the liquid reduces slightly. Remove from heat.
  5. In a separate bowl, mix the softened cream cheese and sour cream until smooth.
  6. Spread half of the cream cheese mixture evenly over the bottom of the prepared baking dish.
  7. Spoon the entire seasoned ground beef mixture over the cream cheese layer.
  8. Top the beef layer with the remaining cream cheese mixture, spreading it gently.
  9. Sprinkle 3/4 cup of the cheddar cheese and all of the Monterey Jack cheese over the top layer.
  10. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  11. Let the casserole rest for 5 minutes after removing it from the oven.
  12. Top with the remaining 1/4 cup of cheddar cheese and the fresh cilantro before serving. Serve with optional avocado crema.

Notes

  • For an avocado crema, mix the mashed avocado with 1 tablespoon of lime juice and 1 tablespoon of water until smooth.
  • If you prefer a spicier casserole, add 1/4 teaspoon of cayenne pepper to the taco seasoning mix.
  • This recipe uses a cream cheese base instead of tortillas, keeping the carb count low.
