  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 slices bacon, cooked until crisp and crumbled
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1 teaspoon dried parsley
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Season the chicken breasts on both sides with salt, pepper, and garlic powder.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until lightly browned. Remove chicken from the skillet and set aside.
  4. In a bowl, combine the softened cream cheese, mayonnaise, Parmesan cheese, chicken broth, and parsley. Mix until smooth.
  5. Spread an equal amount of the cream cheese mixture over the top of each seared chicken breast.
  6. Place the chicken breasts into the prepared baking dish.
  7. Bake for 15 minutes.
  8. Remove the dish from the oven. Top each chicken breast with shredded Monterey Jack cheese and the crumbled bacon.
  9. Return to the oven and bake for another 5-10 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit and the cheese is melted and bubbly.
  10. Let the chicken rest for 5 minutes before serving.

Notes

  • Cook the bacon separately in a skillet or microwave until fully crisp before crumbling it over the cheese topping.
  • If you prefer a tangier sauce, substitute 2 tablespoons of the mayonnaise with sour cream.
  • Serve this chicken over rice or with steamed broccoli to balance the richness.
