  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 8 ounces dry pasta (penne or rotini work well)
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the same pot and cook until softened, about 3 minutes. Add the minced garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pot.
  5. Add the dry pasta to the pot. Stir well. Cover the pot and cook according to the pasta package directions, stirring occasionally to prevent sticking, until the pasta is nearly done (usually about 10-12 minutes).
  6. Reduce the heat to low. Stir in the heavy cream and the grated Parmesan cheese until the sauce is smooth and creamy.
  7. Return the cooked chicken to the pot. Stir in the fresh spinach until it wilts into the sauce.
  8. Taste the sauce and adjust seasoning with salt and pepper as needed. Serve immediately topped with extra Parmesan cheese.

Notes

  • For a richer flavor, use the oil drained from the jar of sun-dried tomatoes instead of olive oil for sautéing.
  • If the sauce becomes too thick while simmering, add a splash more chicken broth or water until you reach your desired consistency.
  • You can substitute chicken thighs for chicken breasts if you prefer darker meat.
