A rich and creamy tortellini dish featuring a sauce made with sun-dried tomatoes, garlic, and Parmesan cheese.

  • 1 (16 ounce) package refrigerated cheese tortellini
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach (optional)

Instructions

  1. Cook the tortellini according to package directions until al dente. Drain the tortellini, reserving about 1/2 cup of the pasta water. Set the cooked tortellini aside.
  2. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
  3. Add the chopped sun-dried tomatoes to the skillet and cook for 2 minutes, stirring occasionally.
  4. Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for about 2 minutes.
  5. Reduce the heat to low. Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper. Stir constantly until the cheese is melted and the sauce is smooth.
  6. If the sauce seems too thick, add a few tablespoons of the reserved pasta water until you reach your desired consistency.
  7. If using spinach, add it now and cook until wilted, about 1 to 2 minutes.
  8. Add the cooked tortellini to the sauce and toss gently to coat everything evenly. Cook for 1 to 2 minutes to heat the tortellini through.
  9. Serve immediately topped with extra grated Parmesan cheese.

Notes

  • For a heartier meal, add 1 cup of cooked, shredded chicken breast when you add the tortellini back to the sauce.
  • If you prefer a smoother sauce, you can blend the sauce ingredients (before adding the tortellini) using an immersion blender.
  • Use oil-packed sun-dried tomatoes for the best flavor. Drain them well before chopping.
